A morning to immerse yourself in the ancient culinary tradition of Lunigiana, following the entire production process: from the harvesting of wild herbs to the cooking and rolling out of the pasta. The herb cake was a seasonal cake, and the ingredients changed according to agricultural availability: pumpkins and potatoes were used in the autumn period, leeks and cabbage in the winter; borage and chard from the beginning of spring until the summer period.
